Sunday Vegetarian Dinner April 10, 2011

Last Sunday my friends Dan (founder of argumentclinic.net) and Jen insisted on the return of the Sunday Vegetarian Dinner, and I gave in on the premise that they handle the food (I was really exhausted from a long bike ride). Since the weather was uncharacteristically beautiful, we decided to make it a rooftop picnic. As it turns out, I have the perfect rooftop for picnicking! Beautiful skyline view, it’s flat, and I can keep an eye on Knuckles through the skylight. I set up work stations in my kitchen, Jen made Pico de Gallo and Dan made Guacamole. Jen also had purchased empanadas from Folklore (which were really tasty, especially with the addition of the chimichurri sauce).

Recipes:

Dan’s Guacamole: 2 avocados, one diced big tomato, a couple cloves of minced garlic, one minced poblano, one minced serrano, half a bunch worth of minced cilantro leaves, one juiced lime, salt to taste.

Jen’s Pico De Galllo: half a red onion, 1 tomato, a few cloves of garlic, 1 serrano, a healthy handful of cilantro and some olive oil, zzzhhhd-together by hand.

I have been working on a few fun IT things as well, I made my first (admittedly hello world) android app and have restarted a project that I’m pretty excited about (link to the beginning on my about me page) – but more about that later.
